Recipe ReDux: Hummus Potato Skins

As football season gets underway and baseball season draws to a close, one thing is for certain–every weekend includes tailgating. When I think of tailgating, I think of chicken wings, mozzarella sticks, french fries, and potato skins. Sabra Dipping Co. challenged Recipe ReDuxers to lighten up a favorite tailgating dish by using hummus, and I knew that I wanted to turn one of these notoriously unhealthy dishes into a delicious, heart-healthy, tailgating snack. Potato skins, usually smothered in cheese and bacon, are one of the more caloric and saturated fat filled dish at any tailgating party. What better way to ReDux this dish then to add hummus! Hummus, made from chickpeas and olive oil, is a staple in the Mediterranean Diet. This diet, high in vegetables, olive oil, fish, and beans has been associated with a decreased risk of developing heart disease, diabetes, and obesity. Two spoonfuls of hummus fulfills your bean recommendation for the week!

Hummus Potato Skins 2

This easy version of potato skins has only 4 ingredients and swaps out cheddar cheese for Roasted Red Pepper Sabra Hummus and replaces white potatoes with sweet potatoes for a Vitamin A kick. This healthified version of potato skins pack a serious flavor punch without all the added calories.

Makes 4 skins

Ingredients:

2 sweet potatoes

4 tablespoons of Roasted Red Pepper Sabra Hummus

2 teaspoons feta cheese

2 teaspoons chives, diced

Directions:

  1. Preheat oven to 400 degrees.
  2. Scrub the potato skins with a vegetable brush under cold running water. Dry with a paper towel. Place on a baking sheet and bake in the oven for 45-60 minutes.
  3. Remove the skins from the oven and set aside to cool. When the potatoes are cool enough to touch, cut each potato in half. Spoon out the middle of the potato and eat separately (this can make an excellent mashed sweet potato or potato hash dish).
  4. Fill each potato skin with 1 tablespoon of hummus.
  5. Put the hummus filled potato skins back in the oven. Bake for 10 more minutes.
  6. Remove the skins from the oven and sprinkle each with feta cheese and chives.

  • Have bad eyes? Sweet potatoes are high in beta-carotene and Vitamin A. Each large sweet potato has over 600% the daily value of Vitamin A, which is great for eyesight!
  • Potato skins are loaded with fiber. High fiber diets high bean diets have been associated with heart health. Eat these hummus filled potato skins to keep your heart happy and health.

    I can’t remember the last time I had a potato skin, and never felt the need to make my own … but now that you’ve turned me on to the sweet potato version, with the added bonus of spicy hummus and feta… game day food indeed!
