Baked Almond & Oat Pear Crumble

I’m on a mission to create delicious dishes with fruits and vegetables that I haven’t featured in previous recipes. When I had two pears sitting my fridge this weekend, I knew they were my next victims. This Baked Almond & Oat Pear Crumble is a lighter version of a holiday dessert that is perfect for any holiday get together. Baked pears are naturally sweet, but the addition of my almond and oat crumble really turns them up a notch.

Holiday brunch or dessert: The cinnamon and nutmeg flavors in this dish give it a real holiday flavor, and the use of oats and almonds as the crumble won’t leave you feeling too guilty about indulging in dessert.

After a workout: Pears and oats are great sources of carbohydrates to replace the ones used up during a workout and prepare you for your next gym session. Almonds contain plant-based protein that helps repair stressed muscles.

Baked Almond & Oat Pear Crumble 3Makes 4 servings

Ingredients:

Filling:

2 Anjou pears

½ teaspoon cinnamon

¼ teaspoon nutmeg

¼ teaspoon salt

½ tablespoon agave

½ teaspoon vanilla

Topping:

½ cup oats

¼ cup raw slivered almonds

1 teaspoon orange zest

½ tablespoon vegetable oil

1 tablespoon dark brown sugar

½ tablespoon agave

1) Preheat oven to 350 degrees.

2) Slice pears into ¼ inch thick pieces. In a large mixing bowl combine pears, cinnamon, nutmeg, salt and agave. Stir to evenly coat the pears.

3) In a separate bowl combine the oats, almonds, orange zest, vegetable oil, brown sugar and agave. Stir evenly.

4) Spray a corningware with cooking spray. Evenly distribute the pears in the dish and coat with the topping. Bake for 35-40 minutes or until golden brown.

  • Leave the skin on the pear! That’s the part that contains the fiber, which aids in digestion and keeps your heart healthy
  • A pear is a good source of Vitamin C and copper, both of which aid your immune system.
